Honey and Orange Chiffon Mini Cakes with Honey Cream Cheese Frosting

I am back in the kitchen and these days are getting colder. Warm your loved ones with this beautiful recipe. The cake is so light and smooth you will want more than just one bite.

Orange and Honey Chiffon Mini Cakes

{7 Mini cakes}

  • 300g Cake flour
  • 150g White sugar
  • 6g or 2 tsp baking powder
  • 1/4 tsp Salt
  • 1 tbsp Orange zest
  • 120g Orange juice
  • 6 Eggs. Separated Egg Yolks and whites.
  • 150g Honey/li>
  • 120g Vegetable Oil/li>

  1. Preheat oven to 300°F / 150°C. No fan. Grease and flour one square 12 inch / 30 cm cake pan.
  2. In a big bowl, sift cake flour and baking powder. Add in sugar, orange zest and salt. Mix to combine.
  3. Add in egg yolks, orange juice, honey and vegtable oil, use a whisk to combine completely.
  4. Place egg whites in the bowl of a standmixer and whisk on high speed until stiff peaks, about 5 minutes.
  5. Using a rubber spatula, fold a quarter of the egg whites into the batter until evenly incorporated; gently fold in the remaining egg whites until just combined and you cannot see egg whites lumps.
  6. Pour the batter into the prepared pan. Bake for 50 minutes or until just beginning to brown on top. Remove from oven and let cool completely on a rack.

Honey Cream Cheese Frosting

  • 125g Butter at room temperature
  • 50g Honey
  • 250g Cream cheese

  1. In the bowl of a stand mixer fitted with the flat beater, beat butter until pale and fluffy.
  2. Add honey and beat 3 minutes starting on low and increasing to medium-high speed.
  3. Add cream cheese and beat until smooth. Do not overbeat.

Assembling mini cakes

1. Use a biscuit or cookie cutter to cut circles out of the sheet cake. (You will have some leftover at the end. You can eat like that or use it later for cakepops too)
2. Pipe a swirl of frosting on the first layer of cake. Start at the center of the mini cake, squeezing in a spiral motion.
3. Use berries to decorate on top.
4. Pour some honey before serving. Do not add too much.
